Kasha and Sauteed Swiss Chard and Pierogies

Kasha

  • 1 onion >$1
  • 2 ribs of celery >$1
  • 4 cloves of garlic >$1
  • 1 cup of Kasha >$1
  • 1 1/3 cups of water
  • 1/4 cup of red wine
  • 2 tbsps of soy sauce

Total – $1.50
Cut up onion,celery,garlic and saute in oil. Add Kasha and saute for about a minute. Then add water cover and simmer for 5 minutes. Add red wine, soy sauce and any other ingredients. Cook on low heat for at least 10 minutes for water to absorb.

Saute Swiss Chard Seperately 1 bunch of swiss chard $2

Pierroges – $3.19 for a bag (we used 3 each) = about $1.50 for this meal

Total For Meal – $5 ( 2 portions) plus leftover kasha

Cous Cous Salad & Bean Sprouts with Yu Choy

  • 1 cup of cous cous >$1
  • 1 cucumber $1
  • tomatoes $2
  • String beans $1
  • red onion >$1
  • Can of garbanzo beans $1

Total – $6

  • Bean Sprouts >$1
  • Yu Choy >$1

Total $1

Cous Cous

Drain & wash can of beans – After dry add salt, pepper, tumeric, garam masala etc.

Make the Cous Cous – let it sit – cut up all of above ingredients and mix in – it will probably need some seasonings

After two portions (along with other food) there was a lot left over!

Bean Sprouts w/ Yu Choy

stirfry

Cut up 1 garlic clove, some ginger root, onion – heat up pan ( or wok) with Canola oil, put in garlic,ginger & onion. Add bean sprouts – and some garlic black bean sauce or some other sauce, then add Yu Choy.

We ate the cous cous and stir fry along with leftover black bean & corn salsa with some store bought chips.

Vegetarian Dirty Rice & Greens

Rice

  • 1 cup of dry brown rice >$1
  • olive oil
  • 1 medium onion >$1
  • 1 green pepper $1
  • 2 cloves of garlic
  • 2 cups of Veggie Sausage ( I used Gimme Lean Sausage Style) $3
  • 1 tsp hot sauce ( I used a scotch bonnet sauce)
  • 1 tsp thyme
  • 1/2 tsp salt
  • cayenne pepper

Total $5
Follow Recipe on pg 232 of Vegan Planet

  • In the future make the rice dish the day before the greens

Almost Dirty Rice and Greens

Greens

  • Bunch of greens (Collards, Chard, Kale) I used Kale this time – $3
  • Olive oil
  • 1 small onion >$1
  • 1 Celery rib > $1
  • 1/2 large green bell pepper $1
  • 2 garlic cloves
  • Can of diced tomatoes $1.50
  • 1 tsp thyme
  • 1 tsp file powder ( I didn’t have access to this so I used sage instead)
  • cayenne

Total – $5

Follow pg. 202 in Vegan Planet

Total for Rice & Greens – $10 – lasts for several days for multiple servings – filling and healthy – tastes just as good when reheated
